Ingredients:
- 1 (14-ounce) can full-fat Sweetened Condensed Milk (Approx. 397g)
- 12 ounces Quality Chocolate Chips or Melts (Approx. 340g)
- Pinch of sea salt flakes (Optional Garnish)
- Festive sprinkles (Optional Garnish)
Instructions:
- Line an 8x8 inch (20x20 cm) pan thoroughly with parchment paper, ensuring an overhang on two sides to create a sling for removal.
- Measure the chocolate into a heatproof bowl.
- Pour the entire can of sweetened condensed milk over the chocolate. Set the bowl over a saucepan of simmering (not boiling) water (double boiler) or use very low direct heat.
- Stir continuously and gently until the mixture is completely smooth, glossy, and uniform. Avoid overheating to prevent scorching.
- If using optional flavourings like vanilla or peppermint extract, stir them in quickly now.
- Immediately pour the fudge mixture into the prepared pan. Use a spatula to gently spread it evenly across the surface.
- While the surface is still warm, sprinkle evenly with optional garnish like sea salt flakes or festive sprinkles.
- Allow the fudge to cool on the counter for about 30 minutes, then cover loosely and transfer to the refrigerator to chill and set for a minimum of 3 hours, or preferably overnight.
- Once completely firm, use the parchment sling to lift the fudge out of the pan. Place on a cutting board and slice into even squares using a large, sharp knife.
