Ingredients:
- 1 box (16 oz) Angel Food Cake Mix
- 1 can (21 oz) Lemon Pie Filling
- 1 tbsp Lemon Zest
- 1 cup Powdered Sugar
- 2 tbsp Fresh Lemon Juice
Instructions:
- Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking pan or leave ungreased to allow the cake to climb the sides.
- In a large mixing bowl, combine the dry Angel Food Cake Mix and the Lemon Pie Filling. Add lemon zest if using.
- Fold the ingredients together using a rubber spatula until just combined. The batter will become thick, foamy, and aerated.
- Transfer the batter into the prepared baking pan and smooth the surface with a spatula.
- Bake for 30–35 minutes until the top is a deep golden brown and the surface springs back when touched.
- Remove from oven and place on a wire cooling rack to cool completely in the pan.
- Whisk together powdered sugar and lemon juice to create a glaze. Drizzle over the cooled cake before slicing.
