Ingredients:

  • 1 cup (226g/8oz) Unsalted Butter, softened
  • 1 cup (200g/7oz) Granulated Sugar
  • 2 cups (240g/8.5oz) All-Purpose Flour, plus extra for dusting

Instructions:

  1. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  2. Gradually add the flour to the butter mixture, mixing on low speed until just combined. Be careful not to overmix!
  3. Form the dough into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  5. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes.
  6. Place the cookies on the prepared baking sheets, leaving about an inch between each cookie. Bake for 8-12 minutes, or until the edges are lightly golden brown.
  7. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
