Ingredients:
- 1 cup (240g) creamy peanut butter (smooth, no-stir kind)
- 1 cup (200g) granulated sugar
- 1 large egg
Instructions:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a mixing bowl, combine the peanut butter, sugar, and egg.
- Mix with a spoon or electric mixer until completely smooth and well combined. The dough will be thick.
- Roll the dough into 1-inch balls. Place the dough balls onto the prepared baking sheet, leaving a bit of space between each.
- Use a fork to flatten each cookie, pressing down twice in a criss-cross pattern.
- Bake for 8-10 minutes, or until the edges are lightly golden brown. The centers will still be soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
