Ingredients:

  • 1 cup (240g) Creamy Peanut Butter
  • 1 cup (200g) Granulated Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Baking Soda

  1. Preheat oven to 350°F (175°C, Gas Mark 4). Line a baking sheet with parchment paper (optional).
  2. In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract and baking soda.
  3. Mix until all ingredients are fully combined and smooth.
  4. Roll the dough into approximately 1-inch balls. Place them onto the prepared baking sheet, leaving about 2 inches between each cookie.
  5. Using a fork, gently press down on each cookie in a criss-cross pattern.
  6. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  7. Remove from oven and let cool on the baking sheet before transferring to a wire rack to cool completely.
