Ingredients:

  • 1 tablespoon grass-fed butter (plus more to grease the ramekin)
  • ¼ cup almond flour
  • 1 large egg
  • ¼ teaspoon baking powder
  • 1 tablespoon heavy whipping cream (or nut milk)
  • ½ teaspoon dried oregano
  • 1 tablespoon grated Parmesan cheese
  • ⅛ teaspoon xanthan gum (optional)

Instructions:

  1. Grease the ramekin with butter to prevent sticking.
  2. In a small bowl, melt the butter in the microwave for about 15 seconds.
  3. Allow the melted butter to cool slightly, then add the almond flour, egg, baking powder, heavy cream, oregano, Parmesan, and xanthan gum (if using).
  4. Whisk the ingredients together until fully combined and smooth.
  5. Pour the batter into the greased ramekin.
  6. Microwave on high for 90 seconds. The bread will puff up significantly during cooking.
  7. Let the bread cool slightly before inverting the ramekin and gently tapping to release the bread.
  8. Enjoy warm, as is or with your favorite spread.
