Ingredients:

  • 1 lb Green Cabbage or Taiwanese Cabbage
  • 1 tbsp Toasted White Sesame Seeds
  • 1 sheet Roasted Nori (shredded)
  • 2 tbsp Toasted Sesame Oil
  • 2 cloves Garlic (finely grated or pressed)
  • 0.5 tsp Salt
  • 0.5 tsp Kombu Dashi Powder
  • 1 tsp Rice Vinegar
  • 1 pinch Black Pepper

Instructions:

  1. Discard the tough outer leaves of the cabbage. Hand-tear the remaining leaves into bite-sized 2-inch pieces to create irregular edges that hold the dressing.
  2. In a small bowl, whisk together the toasted sesame oil, grated garlic, dashi powder, rice vinegar, and salt until the salt is mostly dissolved and the mixture is emulsified.
  3. Place the cabbage in a large mixing bowl. Drizzle the dressing over the leaves and use clean hands to toss and gently massage the cabbage for approximately 30 seconds until the leaves are glossy.
  4. Sprinkle the salad with toasted sesame seeds and shredded nori. Allow the salad to rest for 5 minutes to let the flavors meld before serving.
