Ingredients:
- 1 lb Green Cabbage or Taiwanese Cabbage
- 1 tbsp Toasted White Sesame Seeds
- 1 sheet Roasted Nori (shredded)
- 2 tbsp Toasted Sesame Oil
- 2 cloves Garlic (finely grated or pressed)
- 0.5 tsp Salt
- 0.5 tsp Kombu Dashi Powder
- 1 tsp Rice Vinegar
- 1 pinch Black Pepper
Instructions:
- Discard the tough outer leaves of the cabbage. Hand-tear the remaining leaves into bite-sized 2-inch pieces to create irregular edges that hold the dressing.
- In a small bowl, whisk together the toasted sesame oil, grated garlic, dashi powder, rice vinegar, and salt until the salt is mostly dissolved and the mixture is emulsified.
- Place the cabbage in a large mixing bowl. Drizzle the dressing over the leaves and use clean hands to toss and gently massage the cabbage for approximately 30 seconds until the leaves are glossy.
- Sprinkle the salad with toasted sesame seeds and shredded nori. Allow the salad to rest for 5 minutes to let the flavors meld before serving.
