- 1 1/4 cups (156g) all-purpose flour, plus more for dusting

- 1/2 cup (1 stick/113g) unsalted butter, cold and cubed
- 1/4 cup (60ml) ice water
- 4 medium apples (about 1 1/2 pounds/680g), peeled, cored, and diced
- 1/4 cup (50g) granulated sugar
- 2 tablespoons (30ml) lemon juice
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 tablespoons (30g) unsalted butter
- 1 tablespoon all-purpose flour
- 1/4 cup (32g) all-purpose flour
- 1/4 cup (50g) packed light brown sugar
- 1/4 teaspoon ground cinnamon
- 2 tablespoons (28g) unsalted butter, cold and cubed
Instructions:
- Make the Dough: Combine flour and salt in a food processor (or bowl). Add cold butter and pulse (or cut in with a pastry blender) until the mixture resembles coarse crumbs. Gradually add ice water until the dough comes together. Form into a disc, wrap in plastic wrap, and chill for at least 1 hour.
- Prepare the Apple Filling: In a large skillet, melt butter over medium heat. Add diced apples, sugar, lemon juice, cinnamon, and nutmeg. Cook, stirring occasionally, until the apples are softened but still slightly firm. Stir in flour and cook for 1 minute more. Remove from heat and let cool slightly.
- Make the Streusel Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs.
- Assemble the Mini Pies: Preheat oven to 375°F (190°C). On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a cookie cutter or knife to cut out circles slightly larger than the muffin tin cups. Gently press the dough circles into the muffin tin cups.
- Fill and Top: Spoon the apple filling into the prepared crusts. Sprinkle the streusel topping evenly over the filling.
- Bake: Bake for 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
- Cool and Serve: Let the mini pies cool in the muffin tin for a few minutes before carefully transferring them to a wire rack to cool completely. Serve warm or at room temperature.
