Ingredients:
- 1 pound (450g) medium beets, scrubbed and trimmed
- 1 tablespoon (15ml) olive oil
- ½ teaspoon (2.5ml) sea salt
- ¼ teaspoon (1.25ml) black pepper
- 1 tablespoon (15ml) balsamic glaze (optional)
Instructions:
- Scrub beets thoroughly, removing any dirt. If desired, peel the beets. Cut the beets into ½-inch (1.25cm) cubes.
- In a mixing bowl, toss the cubed beets with olive oil, salt, and pepper. Ensure the beets are evenly coated.
- Preheat air fryer to 375°F (190°C) for 5 minutes. Spread the beets in a single layer in the air fryer basket.
- Air fry for 20-25 minutes, shaking the basket halfway through, until the beets are tender and slightly crispy around the edges. Check for doneness by piercing with a fork.
- Transfer the air-fried beets to a serving dish. Drizzle with balsamic glaze (if using) and serve immediately.
