Ingredients:
- 1.5 lbs chicken breast, cut into 1-inch strips
- 3 large bell peppers (red, yellow, and green), de-seeded and sliced into 1/2-inch strips
- 1 medium red onion, sliced into wedges
- 2 tbsp avocado oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp cumin
- 1/2 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tbsp fresh cilantro, chopped
- 1 fresh lime, cut into wedges
Instructions:
- Pat the chicken breast dry with paper towels. Slice the chicken, bell peppers, and red onion into uniform strips to ensure even cooking.
- In a large mixing bowl, combine the chicken, peppers, and onions. Drizzle with avocado oil and sprinkle with smoked paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Toss thoroughly until evenly coated.
- Preheat the air fryer to 380°F (193°C) for 3 minutes.
- Place the chicken and pepper mixture into the air fryer basket in a mostly single layer. Air fry for 12–15 minutes.
- At the 7-minute mark, remove the basket and shake vigorously to ensure even browning and blistered edges on the peppers.
- Check the chicken with a meat thermometer to ensure it has reached an internal temperature of 165°F (74°C). Remove from the air fryer.
- Let the mixture rest for 2 minutes. Garnish with fresh cilantro and a squeeze of lime juice before serving.
