Ingredients:

  • 1 1/4 cups (150g) all-purpose flour, plus more for dusting
  • 2 teaspoons granulated sugar (10g)
  • 1 1/2 teaspoons baking powder (6g)
  • 1/4 teaspoon ground cinnamon (1g)
  • 1/4 teaspoon ground nutmeg (1g)
  • 1/8 teaspoon salt (pinch)
  • 1/2 cup (120ml) whole milk
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract (5ml)
  • 2 medium apples (about 300g), peeled, cored, and diced
  • 2 tablespoons (30g) unsalted butter
  • 2 tablespoons granulated sugar (30g)
  • 1 teaspoon ground cinnamon (4g)
  • 1/4 teaspoon ground nutmeg (1g)
  • 4 cups (approximately 950ml) vegetable oil or canola oil, for frying
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon ground cinnamon (4g)

Instructions:

  1. Prepare the Apple Filling: Sauté diced apples with butter, sugar, cinnamon, and nutmeg until softened but still slightly firm. Set aside to cool.
  2. Make the Dough: Whisk together dry ingredients in a large bowl. In a separate bowl, whisk together wet ingredients.
  3. Combine Wet and Dry: Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  4. Chill the Dough: Cover the dough and refrigerate for at least 30 minutes.
  5. Roll and Cut: On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut out circles using a cookie cutter or knife.
  6. Add the Apple Filling: Place a small amount of cooled apple filling in the center of each circle. Shape the dough around the filling to form rings. Press edges firmly to seal
  7. Heat the Oil: Heat vegetable oil in a Dutch oven or deep fryer to 350°F (175°C).
  8. Fry the Fritters: Carefully drop the fritter rings into the hot oil, a few at a time, being careful not to overcrowd the pot.
  9. Cook to Golden Perfection: Fry for 2-3 minutes per side, or until golden brown and cooked through.
  10. Drain and Cool: Remove fritters with a slotted spoon and place on a wire rack to drain excess oil.
  11. Coat in Cinnamon Sugar: While still warm, toss the fritter rings in a mixture of granulated sugar and cinnamon.
