Ingredients:

  • 2 cups almond flour
  • 1/4 cup tapioca flour
  • 1/4 cup plain yogurt
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup shredded cheese
  • 1 tablespoon garlic powder (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine almond flour, tapioca flour, baking powder, and salt.
  3. In another bowl, whisk together yogurt, eggs, and olive oil until smooth.
  4. Slowly add the wet mixture to the dry ingredients. Mix until a dough forms.
  5. Fold in the shredded cheese (and garlic powder if using) into the dough until evenly distributed.
  6. Divide the dough into 12 equal portions. Roll each portion into a ball and place it on the prepared baking sheet.
  7. Cover the rolls loosely with a kitchen towel and let them rest for about 30 minutes.
  8. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown on top.
  9. Allow the rolls to cool slightly on the baking sheet before transferring to a wire rack. Serve warm.
