Ingredients:
- 2 cups almond flour
- 1/4 cup tapioca flour
- 1/4 cup plain yogurt
- 3 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1 cup shredded cheese
- 1 tablespoon garlic powder (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, tapioca flour, baking powder, and salt.
- In another bowl, whisk together yogurt, eggs, and olive oil until smooth.
- Slowly add the wet mixture to the dry ingredients. Mix until a dough forms.
- Fold in the shredded cheese (and garlic powder if using) into the dough until evenly distributed.
- Divide the dough into 12 equal portions. Roll each portion into a ball and place it on the prepared baking sheet.
- Cover the rolls loosely with a kitchen towel and let them rest for about 30 minutes.
- Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown on top.
- Allow the rolls to cool slightly on the baking sheet before transferring to a wire rack. Serve warm.
