Ingredients:
- 4 medium bell peppers (any color)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- 1/4 teaspoon cayenne pepper (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds. Lightly coat pepper exteriors with olive oil and season with salt and pepper.
- In a bowl, combine softened cream cheese, shredded cheddar cheese, breadcrumbs, chopped green onions, garlic powder, Italian herbs, and cayenne pepper until smooth.
- Generously fill each pepper with the cream cheese mixture.
- Place stuffed peppers upright in the baking dish.
- Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes until golden brown on top.
- Serve warm and enjoy!
