Ingredients:

  • 4 medium bell peppers (any color)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs
  • 1/4 teaspoon cayenne pepper (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Lightly coat pepper exteriors with olive oil and season with salt and pepper.
  3. In a bowl, combine softened cream cheese, shredded cheddar cheese, breadcrumbs, chopped green onions, garlic powder, Italian herbs, and cayenne pepper until smooth.
  4. Generously fill each pepper with the cream cheese mixture.
  5. Place stuffed peppers upright in the baking dish.
  6. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 5-10 minutes until golden brown on top.
  7. Serve warm and enjoy!
