Ingredients:
- 1 cup (125g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup (240ml) buttermilk (or milk with 1 tablespoon vinegar)
- 1 large egg
- 2 tablespoons (30g) unsalted butter, melted
- 1 teaspoon vanilla extract
- Fresh fruit (bananas, blueberries, strawberries)
- Maple syrup or honey
Instructions:
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk until blended.
- In another bowl, mix wet ingredients: buttermilk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Stir until just combined; avoid over-mixing.
- Grease the muffin tin lightly or use silicone muffin cups.
- Pour the batter evenly into the muffin tin, filling each cup about ⅔ full.
- Bake in the preheated oven for 8 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and allow to cool for a few minutes before serving.
