Ingredients:

  • 1 cup (125g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup (240ml) buttermilk (or milk with 1 tablespoon vinegar)
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Fresh fruit (bananas, blueberries, strawberries)
  • Maple syrup or honey

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine dry ingredients: flour, sugar, baking powder, baking soda, and salt. Whisk until blended.
  3. In another bowl, mix wet ingredients: buttermilk, egg, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined; avoid over-mixing.
  5. Grease the muffin tin lightly or use silicone muffin cups.
  6. Pour the batter evenly into the muffin tin, filling each cup about ⅔ full.
  7. Bake in the preheated oven for 8 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  8. Remove from the oven and allow to cool for a few minutes before serving.
