Ingredients:

  • 3 ½ cups all-purpose flour (440g)
  • 1 packet (2 ¼ tsp) active dry yeast (7g)
  • 1 ¼ cups warm water (310ml)
  • 2 tbsp sugar (30g)
  • 2 tbsp olive oil (30ml)
  • 1 tsp salt (5g)
  • ½ cup unsalted butter, softened (115g)
  • 6 cloves garlic, minced
  • ¼ cup fresh parsley, chopped (15g)
  • 1 tsp dried oregano (1g)
  • ½ tsp black pepper (2g)
  • ½ tsp salt (3g)

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl. Let sit until frothy (5-10 minutes).
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  3. Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover with plastic wrap or a kitchen towel, and let rise in a warm area until doubled in size (about 1 hour).
  5. In a bowl, mix softened butter, minced garlic, parsley, oregano, pepper, and salt until well combined.
  6. Punch down the risen dough and roll it out into a rectangle. Spread the garlic filling evenly across the surface. Roll into a tight log.
  7. Cut the log into 12 equal pieces and arrange them spiral-side up on a baking sheet lined with parchment paper.
  8. Cover again and let rise for 20-30 minutes until puffy.
  9. Preheat your oven to 375°F (190°C).
  10. Bake for 20-25 minutes until golden brown and cooked through.
