Ingredients:

  • 1 cup creamy peanut butter
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Whisk until smooth.
  3. Sprinkle baking soda and salt over the mixture. Fold in until fully incorporated.
  4. Use a cookie scoop to portion out the dough onto a baking sheet lined with parchment paper, leaving space between each.
  5. Use a fork to gently press down on each cookie, creating a crisscross pattern.
  6. Place the tray in the oven and bake for 5-7 minutes or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
