Ingredients:
- 1 cup creamy peanut butter
- ½ cup granulated sugar
- ½ cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon salt
Instructions:
- Preheat the oven to 350°F (175°C).
- In a bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Whisk until smooth.
- Sprinkle baking soda and salt over the mixture. Fold in until fully incorporated.
- Use a cookie scoop to portion out the dough onto a baking sheet lined with parchment paper, leaving space between each.
- Use a fork to gently press down on each cookie, creating a crisscross pattern.
- Place the tray in the oven and bake for 5-7 minutes or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
