Ingredients:
- 1 pound (450g) ground beef (or ground turkey/chicken)
- 1 tablespoon (15 ml) olive oil
- 1 small yellow onion, finely chopped
- 1 green bell pepper, finely chopped
- 1 packet (approx. 1.25 oz/35g) taco seasoning
- ½ cup (120 ml) water
- 1 (15-ounce/425g) can black beans, rinsed and drained
- 1 (10-ounce/283g) can diced tomatoes and green chilies (like Rotel), undrained
- 6-8 hard taco shells
- 2 cups (225g) shredded cheddar cheese (or Monterey Jack, or a blend)
- Shredded lettuce
- Diced tomatoes
- Sour cream (or Greek yogurt)
- Salsa
- Guacamole
- Sliced jalapeños
Instructions:
- Preheat oven to 375°F (190°C). Grease the baking dish.
- Heat oil in skillet over medium heat. Add onion and bell pepper; cook until softened.
- Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Stir in taco seasoning, water, black beans, and diced tomatoes/chilies. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Spoon the beef mixture into each taco shell.
- Top each taco shell with shredded cheese.
- Arrange filled baked tacos in the prepared baking dish. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the shells are slightly browned.
- Remove from oven and top with your favorite toppings. Serve immediately!
