Ingredients:

  • 1 pound (450g) ground beef (or ground turkey/chicken)
  • 1 tablespoon (15 ml) olive oil
  • 1 small yellow onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 packet (approx. 1.25 oz/35g) taco seasoning
  • ½ cup (120 ml) water
  • 1 (15-ounce/425g) can black beans, rinsed and drained
  • 1 (10-ounce/283g) can diced tomatoes and green chilies (like Rotel), undrained
  • 6-8 hard taco shells
  • 2 cups (225g) shredded cheddar cheese (or Monterey Jack, or a blend)
  • Shredded lettuce
  • Diced tomatoes
  • Sour cream (or Greek yogurt)
  • Salsa
  • Guacamole
  • Sliced jalapeños

Instructions:

  1. Preheat oven to 375°F (190°C). Grease the baking dish.
  2. Heat oil in skillet over medium heat. Add onion and bell pepper; cook until softened.
  3. Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain any excess grease.
  4. Stir in taco seasoning, water, black beans, and diced tomatoes/chilies. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Spoon the beef mixture into each taco shell.
  6. Top each taco shell with shredded cheese.
  7. Arrange filled baked tacos in the prepared baking dish. Bake for 8-10 minutes, or until the cheese is melted and bubbly and the shells are slightly browned.
  8. Remove from oven and top with your favorite toppings. Serve immediately!
