- 2 cups All-Purpose Flour

- 1 1/2 cups Diced Apple (peeled)
Instructions:
- Preheat your oven to the initial high temperature of 425°F (220°C). Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and ground cinnamon until well combined.
- In a separate medium bowl, whisk together the granulated sugar, packed brown sugar, melted butter, large egg, whole milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until the batter is just combined, being careful not to overmix. Fold in the 1 1/2 cups of peeled and diced apple. Allow the batter to rest for 5 to 10 minutes; this allows the flour to hydrate fully, thickening the batter and ensuring a taller muffin dome.
- Divide the batter evenly among the prepared muffin liners, filling them nearly full to ensure a high dome. Bake at 425°F (220°C) for exactly 5 minutes. This high heat initiates the dramatic rise.
- Without opening the oven door, drop the temperature down to 375°F (190°C) and continue baking for an additional 12–15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool slightly before serving.
