  • 2 cups All-Purpose Flour

  • 1/2 cup Brown Sugar, packed

  • 1 1/2 cups Diced Apple (peeled)

Instructions:

  1. Preheat your oven to the initial high temperature of 425°F (220°C). Line a 12-cup muffin tin with paper liners. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and ground cinnamon until well combined.
  2. In a separate medium bowl, whisk together the granulated sugar, packed brown sugar, melted butter, large egg, whole milk, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients. Mix gently with a spatula until the batter is just combined, being careful not to overmix. Fold in the 1 1/2 cups of peeled and diced apple. Allow the batter to rest for 5 to 10 minutes; this allows the flour to hydrate fully, thickening the batter and ensuring a taller muffin dome.
  4. Divide the batter evenly among the prepared muffin liners, filling them nearly full to ensure a high dome. Bake at 425°F (220°C) for exactly 5 minutes. This high heat initiates the dramatic rise.
  5. Without opening the oven door, drop the temperature down to 375°F (190°C) and continue baking for an additional 12–15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let cool slightly before serving.
