Ingredients:

  • 1 lb (450g) sirloin steak, thinly sliced
  • 1 tbsp (15ml) soy sauce
  • 1 tbsp (15ml) cornstarch
  • 1 tsp (5ml) sesame oil
  • 1/2 tsp (2.5ml) ground ginger
  • 1/4 cup (60ml) soy sauce
  • 2 tbsp (30ml) brown sugar, packed
  • 2 tbsp (30ml) oyster sauce
  • 1 tbsp (15ml) rice vinegar
  • 1 tbsp (15ml) sesame oil
  • 1 clove garlic, minced
  • 1 tsp (5ml) grated fresh ginger
  • 1/4 cup (60ml) water
  • 2 tbsp (30ml) vegetable oil
  • 1 head broccoli, cut into florets
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (3 oz) package ramen noodles, seasoning packet discarded
  • Sesame seeds, for garnish (optional)
  • Sliced green onions, for garnish (optional)
  • Chili flakes, for garnish (optional)

Instructions:

  1. Marinate the Beef: In a small bowl, combine the sliced steak with soy sauce, cornstarch, sesame oil, and ground ginger. Mix well and set aside while you prepare the other ingredients.
  2. Prepare the Sauce: In a separate small bowl, whisk together soy sauce, brown sugar, oyster sauce, rice vinegar, sesame oil, minced garlic, grated ginger, and water. Set aside.
  3. Cook the Ramen: Cook the ramen noodles according to package directions, but slightly undercook them (about 1 minute less than recommended). Drain and set aside.
  4. Stir-Fry the Vegetables: Heat vegetable oil in a wok or large skillet over high heat. Add broccoli florets and sliced onion and stir-fry for 3-4 minutes, until the broccoli is bright green and slightly tender-crisp. Add minced garlic and stir-fry for another 30 seconds until fragrant.
  5. Cook the Beef: Push the vegetables to one side of the wok or skillet. Add the marinated beef to the other side and stir-fry until cooked through and browned on all sides.
  6. Combine and Simmer: Pour the prepared sauce over the beef and vegetables. Bring to a simmer and cook for 1-2 minutes, until the sauce thickens slightly.
  7. Add the Noodles: Add the cooked ramen noodles to the wok or skillet. Toss everything together until the noodles are coated in the sauce.
  8. Garnish and Serve: Remove from heat and garnish with sesame seeds, sliced green onions, and chili flakes (if desired). Serve immediately.
