Ingredients:

  • 1/4 cup High-quality Balsamic Vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Maple syrup (or honey)
  • 1 small clove Garlic, finely minced
  • 3/4 cup Extra Virgin Olive Oil
  • 1/2 teaspoon Fine sea salt
  • 1/4 teaspoon Freshly ground black pepper

Instructions:

  1. Combine the Flavor Base: In a mixing bowl or jar, combine the balsamic vinegar, Dijon mustard, maple syrup (or honey), minced garlic (if using), salt, and pepper.
  2. Whisk/Shake Vigorously: If using a whisk, mix these ingredients until thoroughly incorporated. If using a jar, secure the lid and shake hard for 15 seconds to combine the flavor base.
  3. The Emulsification Process: Slowly begin streaming the olive oil into the mixture while continuously whisking (or shaking slowly, pausing to shake vigorously again). This slow addition allows the oil molecules to gradually integrate with the binder (Dijon mustard), causing the mixture to turn opaque, thicken, and lighten in color.
