Ingredients:
- 2 cups (240g) Bisquick Baking Mix
- 1 cup (240ml) Milk
- 2 large Eggs
- 2 tablespoons (30ml) Vegetable Oil (plus extra for greasing)
Instructions:
- In a mixing bowl, whisk together Bisquick, milk, eggs, and oil until just combined. Don't overmix; a few lumps are fine.
- Preheat a lightly oiled griddle or frying pan over medium heat. A drop of water should sizzle gently and evaporate quickly.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve hot immediately with your favorite toppings.
