Ingredients:

  • 2 cups (240g) Bisquick Baking Mix
  • 1 cup (240ml) Milk
  • 2 large Eggs
  • 2 tablespoons (30ml) Vegetable Oil (plus extra for greasing)

Instructions:

  1. In a mixing bowl, whisk together Bisquick, milk, eggs, and oil until just combined. Don't overmix; a few lumps are fine.
  2. Preheat a lightly oiled griddle or frying pan over medium heat. A drop of water should sizzle gently and evaporate quickly.
  3. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  5. Serve hot immediately with your favorite toppings.
