Ingredients:

  • 1 cup fresh cilantro leaves, packed (about 30g)
  • 1/4 cup fresh lime juice (60ml)
  • 1/3 cup olive oil (80ml)
  • 1 clove garlic, minced
  • 1 teaspoon honey or agave syrup (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper

Instructions:

  1. Wash and remove stems from the cilantro. Mince the garlic.
  2. In a blender or food processor, add the cilantro, lime juice, garlic, honey (if using), salt, and pepper.
  3. Pour in the olive oil and blend until the mixture is smooth and well combined, scraping down the sides as needed.
  4. Taste the dressing and adjust salt or sweetness as desired.
  5. Transfer to a storage container and refrigerate until ready to use. Stir before serving if separation occurs.
