Ingredients:
- 1 cup fresh cilantro leaves, packed (about 30g)
- 1/4 cup fresh lime juice (60ml)
- 1/3 cup olive oil (80ml)
- 1 clove garlic, minced
- 1 teaspoon honey or agave syrup (optional)
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon freshly ground black pepper
Instructions:
- Wash and remove stems from the cilantro. Mince the garlic.
- In a blender or food processor, add the cilantro, lime juice, garlic, honey (if using), salt, and pepper.
- Pour in the olive oil and blend until the mixture is smooth and well combined, scraping down the sides as needed.
- Taste the dressing and adjust salt or sweetness as desired.
- Transfer to a storage container and refrigerate until ready to use. Stir before serving if separation occurs.
