Ingredients:
- 1 package (3 oz) Blueberry flavored gelatin
- 1/2 cup boiling water
- 8 oz whipped topping, thawed
- 1/2 cup sour cream or plain Greek yogurt
- 2 cups fresh blueberries, washed and dried
- 2 cups miniature marshmallows
- 1 can (20 oz) crushed pineapple, drained very well
- 1/2 cup chopped pecans or walnuts
Instructions:
- In a large glass mixing bowl, whisk the blueberry gelatin with 1/2 cup of boiling water until completely dissolved. Let it sit at room temperature for 10 minutes until cool to the touch but still liquid.
- Whisk the sour cream or yogurt into the cooled gelatin until smooth. Gently fold in the thawed whipped topping using a rubber spatula, employing a 'cut and fold' motion to maintain aeration.
- Fold in the dried blueberries, miniature marshmallows, drained crushed pineapple, and chopped nuts. Cover and refrigerate for at least 2 hours to allow the gelatin scaffold to set and the marshmallows to hydrate.
