Ingredients:

  • 1 package (3 oz) Blueberry flavored gelatin
  • 1/2 cup boiling water
  • 8 oz whipped topping, thawed
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 cups fresh blueberries, washed and dried
  • 2 cups miniature marshmallows
  • 1 can (20 oz) crushed pineapple, drained very well
  • 1/2 cup chopped pecans or walnuts

Instructions:

  1. In a large glass mixing bowl, whisk the blueberry gelatin with 1/2 cup of boiling water until completely dissolved. Let it sit at room temperature for 10 minutes until cool to the touch but still liquid.
  2. Whisk the sour cream or yogurt into the cooled gelatin until smooth. Gently fold in the thawed whipped topping using a rubber spatula, employing a 'cut and fold' motion to maintain aeration.
  3. Fold in the dried blueberries, miniature marshmallows, drained crushed pineapple, and chopped nuts. Cover and refrigerate for at least 2 hours to allow the gelatin scaffold to set and the marshmallows to hydrate.
