Ingredients:

  • 1 cup (240ml) warm milk (about 105-115°F / 40-46°C)
  • 2 large eggs, lightly beaten
  • 4 tablespoons (57g) unsalted butter, melted and slightly cooled
  • 1/4 cup (50g) granulated sugar
  • 1 1/2 teaspoons salt
  • 4 cups (500g) all-purpose flour, plus extra for dusting
  • 2 1/4 teaspoons (1 packet) active dry yeast or instant yeast
  • 2 tablespoons melted butter (optional, for topping)
  • Sesame seeds, poppy seeds, or everything bagel seasoning (optional, for topping)

Instructions:

  1. Add the wet ingredients (warm milk, eggs, melted butter) to the bread machine pan first. Then, add the dry ingredients (sugar, salt, flour, yeast) in the order recommended by your bread machine’s manual. Make sure the yeast doesn't directly touch the salt or sugar.
  2. Choose the dough or sweet dough cycle on your bread machine. Start the machine.
  3. About 5-10 minutes into the cycle, check the dough. It should be soft and slightly sticky. If it seems too dry, add a tablespoon of water at a time. If it seems too wet, add a tablespoon of flour at a time.
  4. Once the dough cycle is complete, gently remove the dough from the bread machine. Place it on a lightly floured surface.
  5. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.
  6. Place the rolls evenly spaced in a greased 9x13 inch baking pan.
  7. Cover the pan with a clean tea towel and let the rolls rise in a warm place for 30-45 minutes, or until doubled in size. They should look nice and puffy, like little doughy clouds!
  8. Preheat your oven to 375°F (190°C).
  9. Gently brush the tops of the rolls with melted butter (if using).
  10. Bake for 25-30 minutes, or until golden brown on top. Check for doneness by tapping on a roll – it should sound hollow.
  11. Let the rolls cool in the pan for a few minutes before transferring them to a wire rack to cool slightly.
