Ingredients:

  • 1 package (1 pound/450g) frozen fillo dough, thawed
  • 6 tablespoons (85g) unsalted butter, melted
  • 8 ounces (225g) brie cheese, rind removed, cut into 1/2-inch cubes
  • 1/2 cup (140g) jam (raspberry, apricot, or fig)
  • 1 tablespoon chopped fresh thyme or rosemary (optional)

Instructions:

  1. Gently unroll thawed fillo pastry. Cover with a damp tea towel.
  2. Place one sheet of fillo on a baking sheet. Brush with melted butter. Repeat with 5-6 sheets.
  3. Cut the layered fillo into 2-inch squares.
  4. Place a cube of brie in the center of each square. Top with 1/2 teaspoon of jam. Sprinkle with herbs (optional).
  5. Bake at 375°F (190°C) for 15-20 minutes, or until golden brown and the cheese is melted.
  6. Cool slightly before serving. Best enjoyed warm.
