Ingredients:

  • 3 very ripe bananas, mashed (approximately 360g / 12 oz)
  • 1/2 cup (120ml / 4 fl oz) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract (5ml)
  • 1 box (about 15-16 oz / 425-450g) yellow cake mix
  • 1/2 teaspoon ground cinnamon (2.5ml)
  • 1/4 cup (30g / 1 oz) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. In a large bowl, thoroughly mash the bananas.
  3. Add the oil, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
  4. Add the cake mix and cinnamon to the wet ingredients. Gently fold until just combined. Avoid overmixing; a few lumps are fine.
  5. Fold in the chopped walnuts or pecans, if using.
  6. Pour the batter into the prepared loaf pan, spreading evenly.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs.
  8. Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
