Ingredients:
- 3 very ripe bananas, mashed (approximately 360g / 12 oz)
- 1/2 cup (120ml / 4 fl oz) vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract (5ml)
- 1 box (about 15-16 oz / 425-450g) yellow cake mix
- 1/2 teaspoon ground cinnamon (2.5ml)
- 1/4 cup (30g / 1 oz) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, thoroughly mash the bananas.
- Add the oil, eggs, and vanilla extract to the mashed bananas. Whisk until well combined.
- Add the cake mix and cinnamon to the wet ingredients. Gently fold until just combined. Avoid overmixing; a few lumps are fine.
- Fold in the chopped walnuts or pecans, if using.
- Pour the batter into the prepared loaf pan, spreading evenly.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean or with a few moist crumbs.
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
