Ingredients:

  • 2 (12.5 ounce/354g) cans cooked chicken, drained well
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon garlic powder
  • Pinch of salt and black pepper
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • Your favorite pizza toppings (pepperoni, mushrooms, onions, bell peppers, olives, etc.)

Instructions:

  1. Drain the canned chicken very well. Press it with paper towels to remove as much excess moisture as possible.
  2. In a large bowl, combine the drained chicken, eggs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly until well combined.
  3. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (optional, but recommended). Spread the chicken mixture evenly onto the baking sheet, forming a circle about 12 inches (30 cm) in diameter.
  4. Bake for 15-20 minutes, or until the crust is lightly golden brown and set.
  5. Remove the crust from the oven. Spread the pizza sauce evenly over the crust. Sprinkle with mozzarella cheese and add your desired toppings.
  6. Return the pizza to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly, and the toppings are heated through.
  7. Let the pizza cool slightly before slicing and serving.
