Ingredients:

  • 1 cup (140g) raw cashews, soaked
  • 1 cup (240ml) vegetable broth
  • 2 tablespoons (30ml) lemon juice
  • 1/2 cup (30g) nutritional yeast
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions:

  1. Drain and rinse the soaked cashews.
  2. Combine cashews, vegetable broth, and lemon juice in the blender. Blend until completely smooth.
  3. Add nutritional yeast, olive oil, onion powder, garlic powder, smoked paprika, and cayenne pepper (if using) to the blender. Blend again until fully incorporated.
  4. Pour the sauce into a small saucepan and heat over medium heat, stirring constantly. Simmer for 2-3 minutes, or until slightly thickened.
