Ingredients:
- 1 medium seedless watermelon (approx. 10 lbs)
- 12 standard wooden skewers
- 2 Tablespoons fresh lime juice
- 1/2 teaspoon fine sea salt
- 1 teaspoon granulated sugar
- 1 teaspoon mild chili powder (or Tajín)
- 1 Tablespoon finely chopped fresh mint leaves
Instructions:
- Cut the watermelon into thick, uniform slices, approximately 1 inch (2.5 cm) thick.
- Trim the rind away entirely. Cut the pink flesh into neat, roughly 1.5-inch (4 cm) cubes.
- Carefully thread one watermelon cube onto the middle of each wooden skewer. Place the skewered fruit onto a parchment-lined baking sheet.
- In a small bowl, whisk together the sea salt, sugar, chili powder, and finely chopped mint (if using) to create the Sparkle Dust.
- Brush the top surface of each watermelon cube lightly with the fresh lime juice.
- Immediately sprinkle the Chili-Lime Sparkle Dust evenly over the wet surface of all the watermelon cubes. Press lightly so the seasoning adheres.
- Place the baking sheet into the refrigerator for at least 15 minutes to allow the flavours to meld and the watermelon to firm up slightly.
- Serve cold, ideally within 2 hours of preparation for maximum freshness.
