Ingredients:

  • 1 medium seedless watermelon (approx. 10 lbs)
  • 12 standard wooden skewers
  • 2 Tablespoons fresh lime juice
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon mild chili powder (or Tajín)
  • 1 Tablespoon finely chopped fresh mint leaves

Instructions:

  1. Cut the watermelon into thick, uniform slices, approximately 1 inch (2.5 cm) thick.
  2. Trim the rind away entirely. Cut the pink flesh into neat, roughly 1.5-inch (4 cm) cubes.
  3. Carefully thread one watermelon cube onto the middle of each wooden skewer. Place the skewered fruit onto a parchment-lined baking sheet.
  4. In a small bowl, whisk together the sea salt, sugar, chili powder, and finely chopped mint (if using) to create the Sparkle Dust.
  5. Brush the top surface of each watermelon cube lightly with the fresh lime juice.
  6. Immediately sprinkle the Chili-Lime Sparkle Dust evenly over the wet surface of all the watermelon cubes. Press lightly so the seasoning adheres.
  7. Place the baking sheet into the refrigerator for at least 15 minutes to allow the flavours to meld and the watermelon to firm up slightly.
  8. Serve cold, ideally within 2 hours of preparation for maximum freshness.
