Ingredients:
- 1 English cucumber, thinly sliced (10 oz / 280g)
- ½ tsp (3g) Kosher salt
- ¼ cup (60g) Mayonnaise
- 1 tbsp (15ml) Fresh lemon juice
- 1 tsp (1g) Dried dill
- ¼ tsp (1g) Cracked black pepper
- ⅛ tsp (1g) Garlic powder
- 8 slices (200g) Soft white or whole grain bread
- 2 tbsp (28g) Unsalted butter
Instructions:
- Place sliced cucumbers in a colander, sprinkle with salt, and toss gently. Let sit for 15 minutes to draw out moisture.
- Rinse cucumbers quickly under cold water and pat dry with a paper towel until tacky.
- In a mixing bowl, whisk together mayonnaise, lemon juice, dill, pepper, and garlic powder until smooth.
- Gently fold the dried cucumber slices into the dressing until fully coated and chill the mixture in the fridge for 15 minutes.
- Spread a thin, edge-to-edge layer of softened butter on one side of every bread slice.
- Pile a generous amount of the chilled cucumber salad onto four slices of bread and top with the remaining bread.
- Press down gently, remove the crusts with a serrated knife, and cut into triangles or fingers.
