Ingredients:

  • 1 English cucumber, thinly sliced (10 oz / 280g)
  • ½ tsp (3g) Kosher salt
  • ¼ cup (60g) Mayonnaise
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (1g) Dried dill
  • ¼ tsp (1g) Cracked black pepper
  • ⅛ tsp (1g) Garlic powder
  • 8 slices (200g) Soft white or whole grain bread
  • 2 tbsp (28g) Unsalted butter

Instructions:

  1. Place sliced cucumbers in a colander, sprinkle with salt, and toss gently. Let sit for 15 minutes to draw out moisture.
  2. Rinse cucumbers quickly under cold water and pat dry with a paper towel until tacky.
  3. In a mixing bowl, whisk together mayonnaise, lemon juice, dill, pepper, and garlic powder until smooth.
  4. Gently fold the dried cucumber slices into the dressing until fully coated and chill the mixture in the fridge for 15 minutes.
  5. Spread a thin, edge-to-edge layer of softened butter on one side of every bread slice.
  6. Pile a generous amount of the chilled cucumber salad onto four slices of bread and top with the remaining bread.
  7. Press down gently, remove the crusts with a serrated knife, and cut into triangles or fingers.
