Ingredients:

  • 1 lb fresh string beans, trimmed
  • 2 tbsp avocado oil
  • 1/2 tsp kosher salt
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tsp honey
  • 1 tsp cornstarch
  • 1 tbsp water

Instructions:

  1. Heat the avocado oil in a wok or large cast iron skillet over medium-high heat until it shimmers and begins to smoke.
  2. Add the trimmed green beans and sprinkle with salt. Stir-fry for 5-7 minutes, shaking the pan frequently, until the skins are blistered and mahogany-colored.
  3. Push the beans to the outer edges of the pan to create a well in the center. Add the minced garlic to the center and sauté for 20-30 seconds until fragrant.
  4. Whisk together the soy sauce, rice vinegar, toasted sesame oil, honey, cornstarch, and water in a small bowl.
  5. Pour the sauce slurry over the beans and toss rapidly for 1-2 minutes until the sauce bubbles and thickens into a glossy glaze. Remove from heat immediately.
