Ingredients:

  • 2 lbs fresh strawberries (approx. 900g), firm and long-stemmed
  • 12 oz high-quality dark or milk chocolate bars (at least 60% cocoa butter)
  • 4 oz white chocolate bars
  • 1 head curly kale or flat-leaf parsley (structural filler)
  • 24 bamboo skewers (12-inch length)
  • 1 floral foam block
  • 1 decorative pot or vase

Instructions:

  1. Wash the 2 lbs fresh strawberries and pat them dry with extreme care. Note: Any moisture will cause the chocolate to seize.
  2. Place 9 oz of the dark chocolate in a glass bowl over a simmering pot of water until just melted and glossy.
  3. Remove from heat and stir in the remaining 3 oz of chopped chocolate until completely smooth and slightly cooled.
  4. Insert a bamboo skewer into the green leafy end of each strawberry about halfway through.
  5. Submerge the berry in the chocolate, then lift and twirl until the excess chocolate stops dripping.
  6. Stand the skewers upright in a block of foam or a tall glass until the surface is firm and matte.
  7. Melt the 4 oz white chocolate and drizzle over the set berries until a beautiful pattern forms.
  8. Place the floral foam inside your decorative pot and cover the top with curly kale.
  9. Insert the skewered Covered Strawberries Bouquet into the foam at varying heights until the arrangement looks full and lush.
  10. Place the entire arrangement in a cool, dry place (not the fridge if possible) for 20 minutes to fully set.
