Ingredients:
- 1 lb fresh strawberries, large and firm
- 1 tbsp lemon juice
- 1.5 cups semi-sweet chocolate chips
- 1 tsp refined coconut oil
- 0.25 cup white chocolate wafers
Instructions:
- Wash strawberries and pat completely dry with a lint-free towel. Use a paring knife to cut a V-shape into the top of each berry to remove the hull and core. Gently round the top shoulders to create a heart silhouette. Brush exposed fruit with lemon juice to prevent browning.
- Combine semi-sweet chocolate and coconut oil in a microwave-safe glass bowl. Heat in 20-second intervals, stirring vigorously between each, until 80% melted. Stir until the remaining pieces melt via residual heat to create a stable emulsion.
- Insert a toothpick into the bottom point of a strawberry heart. Submerge at a 45-degree angle into the chocolate, rotating to seal the V-cut. Lift, shake off excess, and place on a parchment-lined baking sheet.
- Melt white chocolate wafers and drizzle over the set dark chocolate for contrast. Allow to set in a cool, dry area for 15 minutes before serving.
