Ingredients:
- 2 cups (240g) all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups (415ml) milk
- 1/2 cup (115g) unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions:
- Preheat the waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract.
- Combine the wet ingredients with the dry ingredients, stirring until just mixed (some lumps are okay).
- Let the batter rest for about 30 minutes to allow the gluten to relax and the flavors to develop.
- Lightly grease the waffle iron with cooking spray or butter.
- Pour an appropriate amount of batter onto the hot waffle iron and cook until golden brown (about 4-5 minutes).
- Carefully remove the waffle and keep warm in a low oven until ready to serve.
- Serve with your choice of toppings (syrup, fruit, whipped cream).
