  • 2 cups (240g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups (415ml) milk
  • 1/2 cup (115g) unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, beat the eggs, then add the milk, melted butter, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients, stirring until just mixed (some lumps are okay).
  5. Let the batter rest for about 30 minutes to allow the gluten to relax and the flavors to develop.
  6. Lightly grease the waffle iron with cooking spray or butter.
  7. Pour an appropriate amount of batter onto the hot waffle iron and cook until golden brown (about 4-5 minutes).
  8. Carefully remove the waffle and keep warm in a low oven until ready to serve.
  9. Serve with your choice of toppings (syrup, fruit, whipped cream).
