Ingredients:
- 6 slices of stale white bread (160g)
- 50g unsalted butter, softened
- 100g sultanas (or raisins)
- 1 teaspoon ground cinnamon
- 4 large eggs
- 600ml whole milk
- 150ml double cream
- 75g granulated sugar
- 1 teaspoon vanilla extract
- Icing sugar for dusting (optional)
- Whipped cream or custard for serving (optional)
Instructions:
- Preheat the oven to 180°C (350°F).
- Prepare the baking dish by greasing it with a bit of butter.
- Slice the bread into triangles or squares.
- Spread softened butter on each slice of bread.
- Arrange half of the buttered bread in the bottom of the dish; sprinkle with sultanas and cinnamon.
- Layer the rest of the buttered bread on top, with remaining sultanas sprinkled over.
- In a mixing bowl, whisk together the eggs, milk, cream, sugar, and vanilla until smooth to make the custard.
- Pour the custard over the bread, ensuring it is well soaked.
- Leave to soak for about 15 minutes to absorb the custard.
- Place in the oven and bake for 35-40 minutes until the top is golden brown and custard is set.
- Allow to cool slightly before serving.
