Ingredients:

  • 6 slices of stale white bread (160g)
  • 50g unsalted butter, softened
  • 100g sultanas (or raisins)
  • 1 teaspoon ground cinnamon
  • 4 large eggs
  • 600ml whole milk
  • 150ml double cream
  • 75g granulated sugar
  • 1 teaspoon vanilla extract
  • Icing sugar for dusting (optional)
  • Whipped cream or custard for serving (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F).
  2. Prepare the baking dish by greasing it with a bit of butter.
  3. Slice the bread into triangles or squares.
  4. Spread softened butter on each slice of bread.
  5. Arrange half of the buttered bread in the bottom of the dish; sprinkle with sultanas and cinnamon.
  6. Layer the rest of the buttered bread on top, with remaining sultanas sprinkled over.
  7. In a mixing bowl, whisk together the eggs, milk, cream, sugar, and vanilla until smooth to make the custard.
  8. Pour the custard over the bread, ensuring it is well soaked.
  9. Leave to soak for about 15 minutes to absorb the custard.
  10. Place in the oven and bake for 35-40 minutes until the top is golden brown and custard is set.
  11. Allow to cool slightly before serving.
