Ingredients:

  • 1/2 cup (100g) short-grain rice (such as Arborio or pudding rice)
  • 3 cups (710 ml) whole milk
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Optional: Nutmeg for grating over the top

Instructions:

  1. In the saucepan, combine the rice, milk, sugar, cinnamon, vanilla extract, and salt.
  2. Over medium heat, bring the mixture to a gentle simmer, stirring occasionally to prevent sticking.
  3. Reduce the heat to low. Simmer, uncovered, for approximately 1 hour 30 minutes, stirring every 15-20 minutes to prevent sticking and scorching. Cook until the rice is tender and the pudding has thickened to your desired consistency. You'll know it's ready when it coats the back of a spoon.
  4. Remove from the heat and let cool slightly before serving. Garnish with grated nutmeg, if desired.
  5. Serve immediately or chill in the refrigerator for later. Serve warm or cold.
