Ingredients:

  • 1 (10-ounce/283g) package frozen chopped spinach, thawed and squeezed dry
  • 1 (8-ounce/227g) package cream cheese, softened
  • 1 cup (237ml) sour cream
  • 1 cup (237ml) mayonnaise
  • 1 (1-ounce/28g) package dry vegetable soup mix (like Lipton's)
  • 1/4 cup (30g) grated Parmesan cheese
  • 2 cloves garlic, minced (about 1 teaspoon)
  • Pinch of ground nutmeg
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Squeeze as much moisture as possible from the thawed spinach. Ensure it's really dry!
  3. In the mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth.
  4. Stir in the vegetable soup mix, Parmesan cheese, minced garlic, and nutmeg. Season with salt and pepper to taste.
  5. Gently fold in the squeezed spinach until evenly distributed.
  6. Pour the spinach mixture into the prepared baking dish.
  7. Bake for 20-25 minutes, or until heated through and lightly golden on top.
  8. Let the dip cool slightly before serving. This lets the flavors meld.
