Ingredients:

  • 6 fl oz (180 ml) Boiling Water
  • 1 Tbsp (15 ml) Runny Honey
  • ½ fl oz (15 ml) Fresh Lemon Juice
  • 5 fl oz (45 ml) Whiskey (Bourbon or Scotch)
  • 1 whole Cinnamon Stick
  • 2–3 whole Cloves
  • 1 slice Lemon Wheel

Instructions:

  1. Boil Water: Fill the kettle and bring the water to a rolling boil.
  2. Warm the Mug: Pour a small amount of the freshly boiled water into your mug. Swirl it around for 30 seconds to heat the ceramic, then discard the water. This ensures your Toddy stays piping hot.
  3. Combine Honey and Acid: Place the honey and the fresh lemon juice into the pre-warmed mug.
  4. Add Hot Water: Pour roughly 2 fl oz (60 ml) of the hot water into the mug. Stir vigorously until the honey is fully dissolved into the liquid. Ensure no clumps of honey remain at the bottom.
  5. Infuse Spice (Optional): If using cloves, drop them into the liquid now. Allow them to steep while you measure the spirit.
  6. Add the Spirit: Measure and pour the 1.5 oz (45 ml) of whiskey into the mug.
  7. Top Up: Add the remaining 4 fl oz (120 ml) of hot water.
  8. Garnish and Serve: Place the cinnamon stick into the mug (it doubles as a stirrer) and slide the lemon wheel onto the rim.
  9. Taste and Adjust: Give the drink a final stir. Taste it. Adjust the balance: Add extra drops of lemon for sharpness, or a half teaspoon more honey for sweetness, if required. Serve immediately.
