Ingredients:

  • 1 cup unsweetened peanut butter (creamy or crunchy)
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Combine peanut butter, granulated sugar, brown sugar, egg, and vanilla in a bowl; beat until smooth.
  3. Mix in baking soda, salt, and flour until just combined; avoid over-mixing.
  4. Cover the bowl with cling film and refrigerate for 20 minutes.
  5. Line a baking sheet with parchment paper; set aside.
  6. Use a cookie scoop or tablespoon to form dough balls; place on the baking sheet.
  7. With a fork, press a crisscross pattern on each cookie.
  8. Bake for 10-12 minutes until lightly golden edges.
  9. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
