Ingredients:
- 1 cup unsweetened peanut butter (creamy or crunchy)
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour
Instructions:
- Preheat the oven to 350°F (175°C).
- Combine peanut butter, granulated sugar, brown sugar, egg, and vanilla in a bowl; beat until smooth.
- Mix in baking soda, salt, and flour until just combined; avoid over-mixing.
- Cover the bowl with cling film and refrigerate for 20 minutes.
- Line a baking sheet with parchment paper; set aside.
- Use a cookie scoop or tablespoon to form dough balls; place on the baking sheet.
- With a fork, press a crisscross pattern on each cookie.
- Bake for 10-12 minutes until lightly golden edges.
- Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
