Ingredients:

  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 1/2 cup chicken broth or vegetable broth
  • 1/4 cup unsalted butter, cut into small pieces
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions:

  1. Squeeze lemon juice and measure.
  2. Rinse and drain capers.
  3. Chop parsley.
  4. In a small saucepan, add lemon juice and chicken broth.
  5. Place the saucepan over medium heat.
  6. Once liquid begins to simmer, stir in capers.
  7. Simmer for 5-7 minutes, reducing the sauce slightly.
  8. Remove from heat, then whisk in butter until melted and smooth.
  9. Taste and adjust seasoning with salt and pepper.
  10. Stir in chopped parsley before serving.
