Ingredients:
- 1/2 cup fresh lemon juice (about 2-3 lemons)
- 1/2 cup chicken broth or vegetable broth
- 1/4 cup unsalted butter, cut into small pieces
- 2 tablespoons capers, rinsed and drained
- 1 tablespoon fresh parsley, chopped (for garnish)
- Salt and pepper to taste
Instructions:
- Squeeze lemon juice and measure.
- Rinse and drain capers.
- Chop parsley.
- In a small saucepan, add lemon juice and chicken broth.
- Place the saucepan over medium heat.
- Once liquid begins to simmer, stir in capers.
- Simmer for 5-7 minutes, reducing the sauce slightly.
- Remove from heat, then whisk in butter until melted and smooth.
- Taste and adjust seasoning with salt and pepper.
- Stir in chopped parsley before serving.
