  • 8 oz (225g) sharp cheddar cheese, grated
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 teaspoon mustard powder
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 cup (120ml) stout or pale ale
  • Salt and black pepper to taste
  • 4 slices of thick-cut bread (e.g., sourdough, wholemeal)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Toast or grill the slices of bread until golden brown.
  2. In a saucepan, melt butter over medium heat. Whisk in the flour and mustard powder; cook for 1-2 minutes until golden.
  3. Gradually add the ale, whisking continually until thickened. Stir in the cheese until melted and smooth; season with Worcestershire sauce, salt, and pepper.
  4. Spread the cheese sauce generously over the toasted bread slices.
  5. Place the cheese-covered bread on a baking sheet; grill or broil until bubbling and golden (about 5 minutes).
  6. Sprinkle with chopped parsley if desired, cut into halves or quarters, and serve immediately.
