Ingredients:
- 8 oz (225g) sharp cheddar cheese, grated
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 1 teaspoon mustard powder
- 1/2 teaspoon Worcestershire sauce
- 1/2 cup (120ml) stout or pale ale
- Salt and black pepper to taste
- 4 slices of thick-cut bread (e.g., sourdough, wholemeal)
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Toast or grill the slices of bread until golden brown.
- In a saucepan, melt butter over medium heat. Whisk in the flour and mustard powder; cook for 1-2 minutes until golden.
- Gradually add the ale, whisking continually until thickened. Stir in the cheese until melted and smooth; season with Worcestershire sauce, salt, and pepper.
- Spread the cheese sauce generously over the toasted bread slices.
- Place the cheese-covered bread on a baking sheet; grill or broil until bubbling and golden (about 5 minutes).
- Sprinkle with chopped parsley if desired, cut into halves or quarters, and serve immediately.
