Ingredients:

  • 12 oz bag Fresh or Frozen Cranberries
  • 3/4 cup Granulated Sugar
  • 1/2 cup Water
  • 1 tablespoon Freshly grated Orange Zest
  • 20 oz can Crushed Pineapple (well drained)
  • 8 oz tub Whipped Topping (thawed)
  • 3 cups Miniature Marshmallows
  • 1/2 cup Chopped Pecans or Walnuts (optional)

Instructions:

  1. Combine cranberries, sugar, and water in a medium saucepan. Bring to a simmer over medium heat. Cook until the berries burst and the mixture thickens slightly (about 10 minutes).
  2. Stir in the orange zest. Remove from heat and transfer the relish to a bowl. Cover and refrigerate until completely chilled (at least 1 hour).
  3. Open the can of crushed pineapple and drain all excess liquid using a colander. Press gently to remove as much moisture as possible.
  4. In a large mixing bowl, gently fold together the chilled cranberry relish, the drained crushed pineapple, and the thawed whipped topping until just combined. Avoid overmixing.
  5. Gently fold in the miniature marshmallows and the chopped nuts (if using).
  6. Transfer the mixture to a serving dish, cover loosely, and chill in the refrigerator for at least 2 hours before serving to allow the Cranberry Fluff to set properly.
