Ingredients:
- 12 oz bag Fresh or Frozen Cranberries
- 3/4 cup Granulated Sugar
- 1/2 cup Water
- 1 tablespoon Freshly grated Orange Zest
- 20 oz can Crushed Pineapple (well drained)
- 8 oz tub Whipped Topping (thawed)
- 3 cups Miniature Marshmallows
- 1/2 cup Chopped Pecans or Walnuts (optional)
Instructions:
- Combine cranberries, sugar, and water in a medium saucepan. Bring to a simmer over medium heat. Cook until the berries burst and the mixture thickens slightly (about 10 minutes).
- Stir in the orange zest. Remove from heat and transfer the relish to a bowl. Cover and refrigerate until completely chilled (at least 1 hour).
- Open the can of crushed pineapple and drain all excess liquid using a colander. Press gently to remove as much moisture as possible.
- In a large mixing bowl, gently fold together the chilled cranberry relish, the drained crushed pineapple, and the thawed whipped topping until just combined. Avoid overmixing.
- Gently fold in the miniature marshmallows and the chopped nuts (if using).
- Transfer the mixture to a serving dish, cover loosely, and chill in the refrigerator for at least 2 hours before serving to allow the Cranberry Fluff to set properly.
