Ingredients:

  • 1 teaspoon (3g) unflavored gelatin powder
  • 2 tablespoons (30ml) cold water
  • 2 cups (473ml) heavy cream, cold
  • 1/2 cup (60g) confectioners' sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions:

  1. In a small bowl, sprinkle the gelatin over the cold water. Let stand for 5-10 minutes until softened and slightly thickened.
  2. Gently heat the bloomed gelatin in a small saucepan over low heat until completely dissolved. Alternatively, microwave in 5-second intervals, stirring in between, until melted. Be careful not to overheat!
  3. In a large, chilled mixing bowl (or the bowl of your stand mixer), pour in the cold heavy cream.
  4. Begin whipping the cream on medium speed until soft peaks form.
  5. Gradually add the sifted confectioners' sugar, vanilla extract, and salt to the whipped cream.
  6. With the mixer running on low speed, slowly drizzle the melted gelatin into the whipped cream.
  7. Increase the mixer speed to medium-high and whip until stiff peaks form. Be careful not to overwhip!
  8. Use the whipped cream frosting immediately or chill for up to 2 hours to firm up further.
