Ingredients:
- 1 teaspoon (3g) unflavored gelatin powder
- 2 tablespoons (30ml) cold water
- 2 cups (473ml) heavy cream, cold
- 1/2 cup (60g) confectioners' sugar, sifted
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions:
- In a small bowl, sprinkle the gelatin over the cold water. Let stand for 5-10 minutes until softened and slightly thickened.
- Gently heat the bloomed gelatin in a small saucepan over low heat until completely dissolved. Alternatively, microwave in 5-second intervals, stirring in between, until melted. Be careful not to overheat!
- In a large, chilled mixing bowl (or the bowl of your stand mixer), pour in the cold heavy cream.
- Begin whipping the cream on medium speed until soft peaks form.
- Gradually add the sifted confectioners' sugar, vanilla extract, and salt to the whipped cream.
- With the mixer running on low speed, slowly drizzle the melted gelatin into the whipped cream.
- Increase the mixer speed to medium-high and whip until stiff peaks form. Be careful not to overwhip!
- Use the whipped cream frosting immediately or chill for up to 2 hours to firm up further.
