Ingredients:
- 30 Oreo cookies, finely crushed (about 1 3/4 cups / 170g)
- 4 tablespoons unsalted butter, melted (57g)
- 8 ounces cream cheese, softened (227g)
- 1/2 cup granulated sugar (100g)
- 1 teaspoon vanilla extract (5ml)
- 1 cup heavy cream (240ml)
- 2 tablespoons powdered sugar (15g)
- 1/2 teaspoon vanilla extract (2.5ml)
- 6 Oreo cookies, coarsely chopped (for garnish)
- 1 cup heavy cream (240ml)
Instructions:
- Prepare the Oreo Crumble: Combine crushed Oreos and melted butter in a bowl. Mix well and set aside.
- Make the Cheesecake Filling: In a large bowl, beat softened cream cheese and granulated sugar until smooth. Add vanilla extract and mix to combine.
- Whip the Cream: In a separate chilled bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Prepare the Whipped Topping: In a chilled bowl, beat heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Assemble the Parfaits: Layer Oreo crumble, cheesecake filling, and whipped topping in parfait glasses, repeating layers as desired.
- Garnish & Chill: Top with coarsely chopped Oreo cookies. Chill for at least 30 minutes before serving.
