Ingredients:
- 1 cup full-fat cottage cheese (4% milkfat)
- 0.125 tsp fine sea salt
- 1 tsp dried minced garlic
- 1 tsp dried minced onion
- 0.5 tsp poppy seeds
- 0.5 tsp toasted sesame seeds
Instructions:
- Line your air fryer basket or baking sheet with high-quality parchment paper. Do not use foil.
- Place your 1 cup full fat cottage cheese in a fine mesh strainer for 2 minutes. Removing excess liquid now prevents soggy centers later.
- Spread the cheese on a double layer of paper towels and pat the top firmly until no visible pools of liquid remain.
- In a small bowl, combine the blotted cheese with 0.125 tsp fine sea salt.
- Mix 1 tsp dried minced garlic, 1 tsp dried minced onion, 0.5 tsp poppy seeds, and 0.5 tsp toasted sesame seeds in a separate small dish.
- Drop tablespoon sized dollops of cheese onto your parchment lined tray, leaving at least 2 inches between them.
- Use the back of a spoon to press the mounds into thin, even circles until they are about 1/8 inch thick.
- Sprinkle the everything seasoning mixture evenly over each cheese circle.
- Bake at 375°F (190°C) for 15 minutes until the edges are deep golden brown and the center stops bubbling. If using an air fryer, check at 8 minutes.
- Remove from heat and let them sit on the tray for at least 5 minutes. They will feel soft at first but will harden as they cool.
- Carefully peel the chips off the parchment until they release with a clean 'crack'.
