Ingredients:

  • 1 cup full-fat cottage cheese (4% milkfat)
  • 0.125 tsp fine sea salt
  • 1 tsp dried minced garlic
  • 1 tsp dried minced onion
  • 0.5 tsp poppy seeds
  • 0.5 tsp toasted sesame seeds

Instructions:

  1. Line your air fryer basket or baking sheet with high-quality parchment paper. Do not use foil.
  2. Place your 1 cup full fat cottage cheese in a fine mesh strainer for 2 minutes. Removing excess liquid now prevents soggy centers later.
  3. Spread the cheese on a double layer of paper towels and pat the top firmly until no visible pools of liquid remain.
  4. In a small bowl, combine the blotted cheese with 0.125 tsp fine sea salt.
  5. Mix 1 tsp dried minced garlic, 1 tsp dried minced onion, 0.5 tsp poppy seeds, and 0.5 tsp toasted sesame seeds in a separate small dish.
  6. Drop tablespoon sized dollops of cheese onto your parchment lined tray, leaving at least 2 inches between them.
  7. Use the back of a spoon to press the mounds into thin, even circles until they are about 1/8 inch thick.
  8. Sprinkle the everything seasoning mixture evenly over each cheese circle.
  9. Bake at 375°F (190°C) for 15 minutes until the edges are deep golden brown and the center stops bubbling. If using an air fryer, check at 8 minutes.
  10. Remove from heat and let them sit on the tray for at least 5 minutes. They will feel soft at first but will harden as they cool.
  11. Carefully peel the chips off the parchment until they release with a clean 'crack'.
