Ingredients:
- 2 ½ cups (312g) all-purpose flour
- 1 tsp salt
- 1 cup (227g) unsalted butter, chilled and cubed
- 6-8 tbsp (90-120ml) cold water
- 1 lb (450g) ground beef or turkey
- 1 medium onion, diced
- 1 cup (150g) mixed bell peppers, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp paprika
- Salt and pepper, to taste
- 1 cup (100g) shredded cheese (cheddar, mozzarella, or your choice)
- 1 egg, beaten (for egg wash)
Instructions:
- In a large bowl, combine flour and salt. Cut in chilled butter until mixture resembles coarse crumbs.
- Stir in cold water, 1 tablespoon at a time, until dough forms. Shape dough into a disc, wrap in plastic wrap, and chill for 30 mins.
- In a frying pan, sauté onion and garlic until translucent. Add ground meat; cook until browned.
- Stir in bell peppers, oregano, paprika, salt, and pepper; cook until peppers are tender. Remove from heat to cool slightly.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out chilled pastry on a floured surface to about ¼-inch thick; cut into 4-inch rounds.
- Place rounds on a baking sheet, spoon filling onto the center, sprinkle with cheese, and fold over.
- Crimp edges with a fork to seal, and brush tops with beaten egg.
- Bake in preheated oven for 25-30 minutes until golden brown and cheese is bubbly.
- Let cool slightly before serving. Enjoy warm!
