Ingredients:

  • 1 cup Water (for syrup)
  • 1 cup Granulated Sugar (for syrup)
  • 1/2 cup Fresh Cranberries (for syrup)
  • 2 large sprigs Fresh Rosemary (for syrup)
  • 6 fl oz Dry Gin (1.5 fl oz per drink)
  • 3 fl oz Fresh Lime Juice (0.75 fl oz per drink)
  • 2 fl oz Cranberry-Rosemary Simple Syrup (0.5 fl oz per drink)
  • Chilled Soda Water (for topping)
  • Small rosemary sprigs (for garnish)
  • Fresh cranberries (for garnish)
  • Lime wheels or wedges (for garnish)

Instructions:

  1. Phase 1: Creating the Syrup. In a medium saucepan, combine the water, granulated sugar, fresh cranberries, and the two large rosemary sprigs. Bring the mixture to a low boil over medium heat, stirring until the sugar is fully dissolved.
  2. Once boiling, reduce the heat and gently press the cranberries with a wooden spoon or muddler until they burst and release their juice. Simmer gently for 3-5 minutes.
  3. Remove the pan from the heat. Allow the mixture to steep for 15 minutes to fully infuse the rosemary flavour.
  4. Pour the syrup through a fine-mesh sieve into a clean jar, discarding the solids. Allow the syrup to cool completely (at least 30 minutes, or refrigerate for 2 hours) before use.
  5. Phase 2: Assembling the Smash. Fill your chosen glasses (highball or rocks) with ice and set aside to chill them down properly.
  6. In a cocktail shaker, combine the measured Gin (45 ml/1.5 fl oz per serving), fresh Lime Juice (22 ml/0.75 fl oz per serving), and the Cranberry-Rosemary Syrup (15 ml/0.5 fl oz per serving).
  7. Fill the shaker three-quarters full with fresh, high-quality ice cubes. Seal tightly and shake vigorously for 15–20 seconds until the shaker is thoroughly frosted on the outside.
  8. Discard the ice from your chilled glass. Double strain the cocktail mixture into the glass over fresh ice.
  9. Add a small splash of chilled soda water to the top of the drink.
  10. Garnish: Thread 2-3 pierced cranberries onto a small rosemary sprig and place it into the glass. Add a lime wheel to the rim. Serve immediately.
