Ingredients:

  • 8 oz cream cheese, softened
  • 2 tbsp mayonnaise
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 large English cucumber (10 oz)
  • 8-10 slices white pullman loaf or sourdough bread
  • 2 tbsp unsalted butter, softened
  • 1/2 tsp coarse salt

Instructions:

  1. Slice the English cucumber into rounds approximately 1/8 inch thick. Arrange on a paper towel, sprinkle with coarse salt, and let sit for 5 minutes. Pat firmly with paper towels until completely dry.
  2. In a medium bowl, combine softened cream cheese, mayonnaise, lemon juice, chopped dill, garlic powder, salt, and pepper. Whip with a spatula until smooth and velvety.
  3. Spread a thin, edge-to-edge layer of softened butter on one side of each bread slice. Top the butter with a generous layer of the cream cheese spread.
  4. Arrange dried cucumber slices in an overlapping pattern on one side, then close the sandwich.
  5. Trim the crusts off the sandwiches using a serrated knife. Cut each sandwich into three equal fingers or four small triangles.
