Ingredients:
- 8 oz cream cheese, softened
- 2 tbsp mayonnaise
- 1 tbsp fresh lemon juice
- 1 tbsp fresh dill, finely chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 large English cucumber (10 oz)
- 8-10 slices white pullman loaf or sourdough bread
- 2 tbsp unsalted butter, softened
- 1/2 tsp coarse salt
Instructions:
- Slice the English cucumber into rounds approximately 1/8 inch thick. Arrange on a paper towel, sprinkle with coarse salt, and let sit for 5 minutes. Pat firmly with paper towels until completely dry.
- In a medium bowl, combine softened cream cheese, mayonnaise, lemon juice, chopped dill, garlic powder, salt, and pepper. Whip with a spatula until smooth and velvety.
- Spread a thin, edge-to-edge layer of softened butter on one side of each bread slice. Top the butter with a generous layer of the cream cheese spread.
- Arrange dried cucumber slices in an overlapping pattern on one side, then close the sandwich.
- Trim the crusts off the sandwiches using a serrated knife. Cut each sandwich into three equal fingers or four small triangles.
