Ingredients:
- 1 cup taro root, peeled and cubed
- 2 cups water
- 1 cup brewed black tea, cooled
- 1 cup whole milk (or non-dairy milk)
- 2-4 tablespoons sugar (adjust to taste)
- 1 teaspoon vanilla extract (optional)
- ½ cup tapioca pearls (prepared according to package instructions)
- Ice cubes (as needed)
Instructions:
- Boil water in a medium saucepan.
- Add cubed taro root and cook until fork-tender (approx. 10-15 minutes). Drain and let cool.
- In a blender, combine the cooled taro with ½ cup of water. Blend until smooth.
- Brew black tea according to the package instructions and let it cool.
- In a large mixing bowl, whisk together the taro puree, cooled tea, milk, sugar, and vanilla extract until well combined.
- Divide the cooked tapioca pearls between two serving glasses.
- Pour the taro milk tea mixture over the pearls and add ice cubes as desired.
- Serve immediately with a straw or large spoon.
