Ingredients:

  • 1 cup taro root, peeled and cubed
  • 2 cups water
  • 1 cup brewed black tea, cooled
  • 1 cup whole milk (or non-dairy milk)
  • 2-4 tablespoons sugar (adjust to taste)
  • 1 teaspoon vanilla extract (optional)
  • ½ cup tapioca pearls (prepared according to package instructions)
  • Ice cubes (as needed)

Instructions:

  1. Boil water in a medium saucepan.
  2. Add cubed taro root and cook until fork-tender (approx. 10-15 minutes). Drain and let cool.
  3. In a blender, combine the cooled taro with ½ cup of water. Blend until smooth.
  4. Brew black tea according to the package instructions and let it cool.
  5. In a large mixing bowl, whisk together the taro puree, cooled tea, milk, sugar, and vanilla extract until well combined.
  6. Divide the cooked tapioca pearls between two serving glasses.
  7. Pour the taro milk tea mixture over the pearls and add ice cubes as desired.
  8. Serve immediately with a straw or large spoon.
