Ingredients:

  • 4 cups fresh or frozen corn kernels (about 600g)
  • 8 oz cream cheese, softened (about 227g)
  • 1 cup sharp cheddar cheese, shredded (about 100g)
  • ½ cup sour cream (about 120ml)
  • 2 tablespoons butter, melted (about 30g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • ½ cup breadcrumbs (about 60g) (optional)
  • ¼ cup grated Parmesan cheese (about 25g) (optional)
  • 1 tablespoon fresh parsley, chopped, for garnish (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine cream cheese, sour cream, and melted butter. Whisk until smooth.
  3. Stir in corn, cheddar cheese, garlic powder, onion powder, salt, and pepper.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. In a small bowl, mix breadcrumbs with Parmesan cheese. Sprinkle over the corn mixture.
  6. Place in the preheated oven. Bake for 30 minutes or until bubbly and golden brown on top.
  7. Remove from oven, let cool slightly, and garnish with fresh parsley before serving.
