Ingredients:
- 4 cups fresh or frozen corn kernels (about 600g)
- 8 oz cream cheese, softened (about 227g)
- 1 cup sharp cheddar cheese, shredded (about 100g)
- ½ cup sour cream (about 120ml)
- 2 tablespoons butter, melted (about 30g)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and black pepper to taste
- ½ cup breadcrumbs (about 60g) (optional)
- ¼ cup grated Parmesan cheese (about 25g) (optional)
- 1 tablespoon fresh parsley, chopped, for garnish (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine cream cheese, sour cream, and melted butter. Whisk until smooth.
- Stir in corn, cheddar cheese, garlic powder, onion powder, salt, and pepper.
- Pour the mixture into a greased baking dish, spreading it evenly.
- In a small bowl, mix breadcrumbs with Parmesan cheese. Sprinkle over the corn mixture.
- Place in the preheated oven. Bake for 30 minutes or until bubbly and golden brown on top.
- Remove from oven, let cool slightly, and garnish with fresh parsley before serving.
